Homemade Luncheon Meat

Luncheon Meat is everyone favorite Canned food, including myself. I always want to avoid buying canned food as there is alot of artificial preservative contain inside, especially PRC Products.  But sometimes, we still need to enjoy nice foods once in a while. The outlook still need to improve more to look like the real canned Luncheon meat. As for the taste, it still a difference with those canned one, but it still taste good. At least, it is more healthy and safer to consume it.

That day, saw Blogger doing their own Homemade Luncheon Meat, and wanted to try making myself. I viewed the below blogger's recipes:

Ingredients (Make 2 tin):
750g Mince Pork, chopped as fine as possible
2 Egg, Use egg white only
35g Cornstrach
35g Cake Flour

Seasoning:
2 Tbsp Soya Sauce
2 tsp Brown Sugar
1 tsp Five Spices powder
1 tsp red yeast rice powder (for colouring - this is a natural colour)
2 tsp Sesame Oil
1/4 tsp white pepper

Making Ginger Juice:
1/2 cup of fresh Ginger
5 Cloves of garlic
5 tbsp of water 
* Grind all to paste and extract the ginger juice..
* Not recommend to put the mince garlic / ginger direct to mince pork.


Steps:
1) Chop or blend the mince pork as fine as possible. Add in all the seasoning and Egg whites to the mince pork, and combine together.

2) Add in cornstarch and cake flour, and mix through all combine.

3) Add in the ginger juice, and combine till sticky form (like glue).

4) Prepare 2 oil-greased bowl, transfer the mince meat to the bowl gradually and compress to avoid air bubble form inside the bowl. 


5) Use a plate to cover the top of the bowl, to compress the mince meat more (the mince meat will expand during steaming process.

6) Steam over boiling water, Low heat for 45 min. Wait for Luncheon Meat completely cool before slicing it.



Next day, I fried the Luncheon Meat using Buffalo Smart Fryer, Fry Function, 20 min

Pumpkin & Mushroom Rice w/Fried Luncheon Meat

Another simple dish to prepare and yet it's delicious - All in one Pot. I am using Japanese Pumpkin, which has a golden colour & Sweet taste. I spent 20 minutes to prepare the ingredients, and it Pumpkin rice cooked by Buffalo Smart Cooker, and Fried Luncheon meat cooked by Buffalo Smart Fryer


Ingredients (This portion can serve 3 persons):
2.1/2 cup Rice
2.1/2 cup Water
2- 3 cup Japanese Pumpkin
4 Dry shiitake mushrooms, Soak in water till soft and slice to stripe.
20 pcs of Dry Shrimp, soak in water till soft, and pound.
4 cloves Mince Garlic
1 cup of Leek

Seasoning:
1/4 tsp of Salt
1 tsp of Light Soy Sauce
1 tsp of Mushroom powder


Steps:
1) Use "REHEAT" Function, Put some olive oil to the Smart cooker's Pot. Add in the Garlic and Dry Shrimp. Close the lid and cook for 3 minutes.


2) Open Lid, and add on the Shiitake mushroom and close lid for another 3 minutes.


3) Add the rest of ingredients (Rice, Water, Pumpkin, Leek and Seasoning) onto the Pot.

4) Use "Steam Rice" function, and press "START".

Cut the Luncheon meat to cube and fried using Buffalo Smart Fryer for 30 mins. Flip in between the cooking time. At last 5 min, i transferred the luncheon meat from plate to rack, to drip out excess oil from luncheon meat.



Mixed the fried luncheon meat with the Pumpkin rice, and serve Hot.

Char Siu (BBQ Pork Belly)

NO OIL RECIPES


Ingredients:
2 Strips of Pork belly (remove the top skin part)

Marinate Sauce:
2 tbsp Char Siu Sauce (Lee Kum Kee Brand)
2 tbsp Oyster Sauce
1 tbsp Mince garlic

Marinate the Pork Belly overnight.

Use High rack, "Roast" mode, 40 mins, Flip the pork belly half way the cooking time.

The remaining marinate sauce placed onto a small bowl, and use Smart fryer to heat up to thick sauce. then dizzle to the cooked BBQ Pork belly.

Serve hot the best!

Chicken wrapped in Pandan Leaves

This is a simple dish to prepare ahead, and can be a great dish to present to your family or friend gathering.

I run out of stock for chicken leg meat, thus use chicken breast meat. I am so surprised that it is still tender, juicy.

LESS OIL RECIPES


Ingredients:
500g Chicken Breast Meat
Adequate amount of Pandan Leave.

Marinate Sauce:
2 tbsp oyster sauce
1 tbsp soya sauce

1 tbsp fish sauce
2 tbsp brown sugar 
1 tbsp sesame oil
2 tbsp mince garlic
2 tbsp mince coriander root

Marinate chicken breast for at least 4 hours. And wrapped in pandan leave.

Use Baking cage, "fry" & "Rotate" mode, 230deg for 15 min






Cooked after 15 min....

Crispy Roast Pork





Ingredients:
1 Kg  Pork Belly
Coarse Salt
Fine Salt
Five Spices Powder

Step 1:
Rinse the Pork Belly, Boil the Pork Belly under boiling water for 5 min. 
and cool the pork belly using cool water.

Dry the Pork belly using paper towel.

Step 2:
Cut the Meat with few lines as below. 
Rub the meat with adequate amount of fine salt and five spices powder.
And use wooden stick to hold the meat together after marinate done.


Step 3
- Turn to the Skin side up, and place onto a plate.
- Poke the skin using wooden stick.
- After poking, use Baking soda to rub the skin. Just a little amount.
- Rub the skin using fine salt.
- Poke the skin once more time.
- Rub with some salt again.
- Brush thin layer of White vinegar to the skin.
- Placed the poked pork belly to fridge for overnight.
- Remove Pork belly from fridge to room temperature for at least 1 hours, before you start roasting it.






 Step 4
- Use "TURBO" Mode for 15 min on the meat side.


- Turn to Skin side, and use paper towel to wipe off excess oil.

- Add on Coarse Sea salt cover the skin.

Change the cooking mode "ROAST"  230, for 45 min on the skin side

Homemade Ginger Powder

Ginger are spicy, aromatic and nice flavor on smell and taste which are uniques. It's bring health benefits for our body too.

Ground Ginger Powder can be useful  and easier for marinate, steam, cooking and even making ginger tea.

No Oil recipes

Here my version on making Ginger Powder:

Clean the dirt on the ginger skin with brush.

Slice the Ginger with mandoline slicer

Cut to thin julienne slice

Place Slice ginger to Baking Cage.
Use "Bake", Rotating mode 130deg., 1 Hour. 
Cool completely. Blend baked ginger to Powder form.

Sieve the blended ginger form to avoid lumpy ginger.

Final Result!

Can start to use for my cooking journey!

Salmon Spaghetti w/Grill prawn

This is a last minute call meal request from Kids last evening. The original recipe is to use Tuna from Can tin. Instead of of Tuna, substitute with Fresh Salmon.

Olive Oil recipes



I use Organic Spaghetti sauce as below:

Ingredients:
3 Per      Egg Spaghetti, Cook as per packing instruction
1 Slice   Fresh Salmon
3 ea       Whole Prawn
1/2 Btl   Organic Tomato sauce with Basil
1/2 Btl   Organic Chunky Tomato Puree Basil
2 Cloves Garlic

Steps:

Equiment: Buffalo Smart Fryer (Use "Bake", 200Deg.)
1) Fresh Salmon cook in 20 Min  (Flip after 10min) 
2) Add in Prawn after 10 min while flipping the salmon.
3) Remove bones for the cooked salmon, and tear to small pieces.

Equiment: Buffalo Smart Cooker (Use "Steam" Function)
1) Add 1tsp Olive oil and Garlic to Smart cooker. Close lid and steam for 2 minutes
2) Add in Spaghetti Sauces and Salmon pieces, Close lid and steam for another minutes.

Served the Spaghetti with Salmon tomato sauce and topping with grilled prawn. Enjoy!

Roasted Chicken Wing w/ Mushrooms & potatoes

This is late post. This cook on the Christmas eve dinner for 2014.  

To speed up the roasting time, i use 2 layer method to roast the chicken wings w/ mushrooms & potatoes together in Buffalo Smart Fryer. Chicken wings on the top layer and Potatoes/Mushroom is on bottom layer. The chicken wings sauce drip on the potatoes and taste is amazing delicious.

No Oil Recipes 




Ingredients (Roasted Chicken Wing):
8 pcs   Chicken Wing
1 tbsp  Worcestershire sauce
1 tbsp  HP Sauce
1 tbsp  Oyster Sauce
Pinch of Pepper

Marinate chicken wings with all ingredients for at least 30min.


Ingredients (Roasted Potatoes w/Mushrooms):
10 pcs  Mini Potatoes (With skin on)
1 Pkt    Fresh Button Mushrooms
Pinch of Salt

Cut 1/2 for Mini Potatoes with added salt and cook in boiling water for 5 mins. Drain access water.
Cut 1/2 part for Fresh button mushroom.

Place the Potatoes and Mushrooms on to a Stainless steel pan. Line the chicken wings on High Rack. Use "Roast" mode, for 30 min (flip the chicken wing after 15 min roasting time).

Crispy Fried Drumstick

Crispy Fried Drumstick can simply make using Buffalo Smart Fryer.

Less-oil recipes


Ingredients:
1) 8 pcs Chicken Drumsticks
2) Homemade Garlic Powder
3) Pinch of Salt
5) "NAGO" KFC Spices Powder
6) 1 Egg white

Steps:
1) Marinate the Chicken drumsticks with Homemade garlic powder and salt for at least 30min.
2) Coat the Chicken drumsticks with egg white, then coat with KFC Spices powder.
3) Line the Chicken drumsticks on the High Rack, Spray some oil on the surface of the chicken drum.
4) Use "FRY" Mode, 230deg. and fry each side for 15 min.

Enjoy while it hot!


Fried Peanuts w/Garlic and Silver fish


This is an easy recipes. In Usual, this snack need to use lot of oils to deep fry the peanuts, garlic and silver fish to obtain the crispness. Now, with Buffalo Smart Fryer, you can use less oil and make this tasty, crispy peanuts snacks.

This is Less-Oil recipes




Ingredients:
1) 800g raw Peanuts
2) 1 Whole Garlic, peeled and sliced
3) 1 handful of Silver fish, remove the head of silver fish and clean the dirt.
4) Homemade Garlic Powder
5) Adequate Salt
6) 1 Tbsp Cooking oil



Steps:
1)  Boil the raw Peanuts for 5 Min, and turn off the fire then leave the peanuts in the boiling water for 15 mins. Drained it.

2) Mix the cooked peanuts, sliced garlic, and Silver Fish. And toss with 1 tbsp of oil. Add Salt & Homemade Garlic Power to the tossed peanuts.

3) Placed the tossed peanuts into the baking cage, use "FRY" mode, 150 deg for 40 min, and increase temp to 180 deg  for additional 20 min.

Homemade Garlic Powder

Garlic is an important ingredients required to bring up favor smell and taste to all the foods.

Garlic powder is suitable to marinate meat. My deep fried chicken, Roasted chicken, Chicken Nuggets, Fried Peanuts do contain Homemade garlic powder.

Ready-made Garlic Powder from the Supermarket cost about $8.00, and Homemade cost less than $1.00 for 5 whole garlics.

This is Less-Oil recipes

Ingredients:
1) 5 Whole Garlic, Peeled and cut to slice
2) 1 Tbsp oil

Steps:
1) Mix Sliced garlic buds with 1 tbsp cooking oil, and toss it well.
2) Put all the sliced garlic buds into baking cage w/ rotating function, use Low Temp 130 deg. for 30 min.
3) Increase temp to 150 deg. for another 30 min.
4) Leave to cool, and blend into powder form.
5) Store in air-tight container. you may store in fridge.

* Tips:
- Recommend to use low temp to fry the garlic to avoid burn (which cause bitter taste)
- Use dry spoon to scoop the garlic powder, this is to avoid water penetrate into powder, and cause lumpy form.

Easy Chicken Nugget

All kids love to eat Chicken Nuggets. Instead of buying frozen ready-made chicken Nugget, it would be a good idea to make your own. Without preservative, fresh, healthier and last things.. U can use your choice of ingredients to suit your taste buds! 

This is Oil-free recipes.


This is my version of Easy Chicken Nugget:

Ingredients A:
1) 500g Mince chicken breast with 10% chicken fat
2) 1 Chopped Onion 
3) 1 tbsp Garlic Powder (Homemade Garlic Powder)
4) Pinch of salt and pepper 
6) 3 tbsp Nestle Nestum cereal (Cereal is for hold all ingredient together)

Steps:
- Mixed all Ingredients A together and marinate at least 20 minutes.
- Make to desire shape for the marinate mince chicken.

Ingredients B (Coating): 
1) 1 egg, beaten
2) Plain Flour
3) Adequate breadcrumbs
4) Parmesan Cheese (Optional)

Steps:
- Shaped mince chicken to coat with Ingredients B.
  1st coat with flour, 
  2nd coat with egg mixture, 
  3rd coat with breadcrumbs and Parmesan cheese. 

Line the Chicken Nugget on the tray (piece by piece) and Freeze the nugget for at least 30mins or hold till in shape.

Use Buffalo smart fryer,  placed the chicken nugget into cage, select "fry", rotating for 20mins..
Enjoy oil-free, flame-free and smoke-free cooking!

Tips:
* You may make few batches of chicken nuggets, and store in ziplock bag for next consuming.
* You may added mushroom, carrot, celery, onion to your chicken nugget. 
* Instead of Cereal, you may use oatmeal.

Kueh Momo

During Chinese or Malay festive season, Kueh Momo is a MUST HAVE Snacks. This is my version of Kueh Momo using Buffalo Smart fryer to bake it. 

It's simply sweet and delicious!


Ingredients:

1 kg plain flour
1 cup Full cream milk powder
1 medium can 'QBB' brand ghee (545gm)
250g icing sugar, and some icing sugar for coating


Steps:

1)    Fried the plain flour in a wok without added oil, till it dried and fluffy.
2)    Add milk powder and icing sugar into fried flour and mix well.
3)    Add Ghee oil to the flour and form into a dough.
4)    Use a 1 tsp spoon to measure, and roll into a round shape, line on a grease proof paper.
5)    Use “Bake” mode, 160 Deg. For 13 min


Let it cool for few minutes, and coat with icing sugar. Store in a air-tight container after cooled completely.

Snow Cheese Cake

Snow Cheesecake is simple, and yet delicious. This cake is my family all time favorite cake.
Although this is called Cheesecake, the cake itself are Chiffon cake base and do not contain cheese. A layer of cheese frosting spread on top of the Chiffon cake, and sprinkle with shredded cheddar cheese. 

My version is thin layer of cake, and if  you would like the thicker layer, you may double the ingredients. I bake the cake using Buffalo Smart Fryer. 

Buffalo Smart Fryer vs Traditional oven:
- Heat circulation effectively throughout the fryer, and cake cooked evenly.
- Colour texture are nicer.
- You can see the cooking progress on the glass lid.
- All the material inside the Fryer are all Stainless Steel and do not contain Teflon or paint coat.

Buffalo Smart Fryer are Smart, Safe and Healthier choice to use.

Chiffon Cake Base:

Ingredients:
(A)
3 Egg yolks
10g Sugar
40g Fresh Milk
30g Corn oil
60g Bake King Hong Kong Flour (or Top Flour), Sieved

B)
3 Egg whites
30g Sugar
1/8tsp white vinegar

Steps:
1) Egg Yolks +  Sugar, Mix together till combined.
2) Add in Fresh Milk and Corn oil, and mix together.
3) Add in Flour mix till combine.

Bake using 7" square pan, using "Bake" mode, 160 Deg. for 30 min.
Cool complete, before remove from pan.

Tips:
** Chiffon Cake pan grease with corn out and lined with grease proof paper.


Cream Cheese Frosting

Ingredients:
(A)
125g Philadelphia cream cheese,room temperature
25g Sweetened condensed milk (may add or reduce as per your prefer)

(B)
60g Nestle cream

(C)
KRAFT cheddar cheese, shredded

Steps:
1) In a mixing bowl, place in cream cheese and condensed milk, beat the mixture and combine till smooth texture.
2) Add on Nestle cream and till combine. Frosting are ready to use.

Tips:
** Frosting can be keep in the fridge for next consuming for at least a month period.

And Now, Cover the top of the cake with the frosting, and coat the whole cake with shredded cheddar cheese. chill the Snow Cheesecake at least 1 hour before serving.


Cut into small cube to serve. Enjoy!
