Homemade Curry Chicken (Dry Version)

Oh My God!! Thermomix can cook Curry Chicken.. All dump in to Bowl, it do the work itself and . Not need to stand in front of Stove to cook till sweat and smelly till my hair, cloth all curry smell.. and all ingredients are nature from our mother earth... No preservatives use in this recipes.
But still taste as good as stove cook one..


Ingredients:

   3ea       Chicken Whole Leg (Cut into bite size)
* 20g       Curry Powder
* 2 tsp     Salt
* 1 tsp     Organic Brown Sugar
(* Marinate Chicken whole leg with above seasoning.)

Ingredients A:
5 ea          Dried Chili
3 ea          Large Red Chili
2 cloves   Garlic
10 ea        Shallot
5ea           Buah Keras
1/2"          Tumeric
10g           Galangal
60g           Cooking Oil
20g           Water

Ingredients B:
5 ea          Potatoes (Cut to bite size)
2 stalk      Curry Leaves
2 stalk      Lemon Grass (Smashed)

Ingredients C:
200ml      Coconut Milk / Evoporate Milk / Soya Milk


Method:
1. Put Ingredient A into TM Bowl to grind, Scrap down sides of wall and grind once more (10 sec x 2 times, Speed 10)

2. Fry till fragrant (8 min, Varoma, Speed 1)

3. Add Chicken and Ingredient B to cook (18 min, Varoma, Reverse Spooon)

4. Add Ingredient C to cook (2 min, Varoma, Reverse Spooon).

5. Serve Hot!

Homestyle Steam Chicken Rice

Steam Chicken Rice is all time favorite meal for my family. The Chicken's texture will springy, juicy, flavorful.   




Recipe here you go:
Ingredient A:
2ea        Whole leg Chicken
2 cups    Rice
2 cups    Water
1 tsp       Ginger (Chopped)
1 tsp       Garlic (Chopped)
1/2tsp     Oil
1 tsp       Salt
1/2tsp     Butter
2pcs       Pandan Leaves (tie to knot)

Ingredient B;
1tsp        Chinese Wine
1tsp        Sesame Oil
1tsp        Salt
1 tsp       Ginger (Slice)
1 tsp       Garlic (Chopped)
3 pcs       Spring Onion


Method:

1. Clean and marinate the Chicken with Ingredient B for at least 30 min.

2. Choose "Steam" function, then add in Butter and Oil.

3. Wait till Butter melted, add in chopped Ginger and Garlic, saute till fragrant, add in Rice, water, salt, pandan leaves, mix well.

4. Put in the steam rack, add in marinated chicken. Close the lid.


5. Cancel the "Steam" function, choose "White Rice" Function, Press Start for few seconds to cook.

6. Serve hot.

Chicken wrapped in Pandan Leaves

This is a simple dish to prepare ahead, and can be a great dish to present to your family or friend gathering.

I run out of stock for chicken leg meat, thus use chicken breast meat. I am so surprised that it is still tender, juicy.

LESS OIL RECIPES


Ingredients:
500g Chicken Breast Meat
Adequate amount of Pandan Leave.

Marinate Sauce:
2 tbsp oyster sauce
1 tbsp soya sauce

1 tbsp fish sauce
2 tbsp brown sugar 
1 tbsp sesame oil
2 tbsp mince garlic
2 tbsp mince coriander root

Marinate chicken breast for at least 4 hours. And wrapped in pandan leave.

Use Baking cage, "fry" & "Rotate" mode, 230deg for 15 min






Cooked after 15 min....

Roasted Chicken Wing w/ Mushrooms & potatoes

This is late post. This cook on the Christmas eve dinner for 2014.  

To speed up the roasting time, i use 2 layer method to roast the chicken wings w/ mushrooms & potatoes together in Buffalo Smart Fryer. Chicken wings on the top layer and Potatoes/Mushroom is on bottom layer. The chicken wings sauce drip on the potatoes and taste is amazing delicious.

No Oil Recipes 




Ingredients (Roasted Chicken Wing):
8 pcs   Chicken Wing
1 tbsp  Worcestershire sauce
1 tbsp  HP Sauce
1 tbsp  Oyster Sauce
Pinch of Pepper

Marinate chicken wings with all ingredients for at least 30min.


Ingredients (Roasted Potatoes w/Mushrooms):
10 pcs  Mini Potatoes (With skin on)
1 Pkt    Fresh Button Mushrooms
Pinch of Salt

Cut 1/2 for Mini Potatoes with added salt and cook in boiling water for 5 mins. Drain access water.
Cut 1/2 part for Fresh button mushroom.

Place the Potatoes and Mushrooms on to a Stainless steel pan. Line the chicken wings on High Rack. Use "Roast" mode, for 30 min (flip the chicken wing after 15 min roasting time).

Crispy Fried Drumstick

Crispy Fried Drumstick can simply make using Buffalo Smart Fryer.

Less-oil recipes


Ingredients:
1) 8 pcs Chicken Drumsticks
2) Homemade Garlic Powder
3) Pinch of Salt
5) "NAGO" KFC Spices Powder
6) 1 Egg white

Steps:
1) Marinate the Chicken drumsticks with Homemade garlic powder and salt for at least 30min.
2) Coat the Chicken drumsticks with egg white, then coat with KFC Spices powder.
3) Line the Chicken drumsticks on the High Rack, Spray some oil on the surface of the chicken drum.
4) Use "FRY" Mode, 230deg. and fry each side for 15 min.

Enjoy while it hot!


Easy Chicken Nugget

All kids love to eat Chicken Nuggets. Instead of buying frozen ready-made chicken Nugget, it would be a good idea to make your own. Without preservative, fresh, healthier and last things.. U can use your choice of ingredients to suit your taste buds! 

This is Oil-free recipes.


This is my version of Easy Chicken Nugget:

Ingredients A:
1) 500g Mince chicken breast with 10% chicken fat
2) 1 Chopped Onion 
3) 1 tbsp Garlic Powder (Homemade Garlic Powder)
4) Pinch of salt and pepper 
6) 3 tbsp Nestle Nestum cereal (Cereal is for hold all ingredient together)

Steps:
- Mixed all Ingredients A together and marinate at least 20 minutes.
- Make to desire shape for the marinate mince chicken.

Ingredients B (Coating): 
1) 1 egg, beaten
2) Plain Flour
3) Adequate breadcrumbs
4) Parmesan Cheese (Optional)

Steps:
- Shaped mince chicken to coat with Ingredients B.
  1st coat with flour, 
  2nd coat with egg mixture, 
  3rd coat with breadcrumbs and Parmesan cheese. 

Line the Chicken Nugget on the tray (piece by piece) and Freeze the nugget for at least 30mins or hold till in shape.

Use Buffalo smart fryer,  placed the chicken nugget into cage, select "fry", rotating for 20mins..
Enjoy oil-free, flame-free and smoke-free cooking!

Tips:
* You may make few batches of chicken nuggets, and store in ziplock bag for next consuming.
* You may added mushroom, carrot, celery, onion to your chicken nugget. 
* Instead of Cereal, you may use oatmeal.
